While grown under organic principles, this vintage was the last before organic certification was granted - so it's pretty well organic without the tick!\u003cbr\u003e\u003cbr\u003eOnce the grapes reach the cellars, they undergo a pre-fermentation (to aid extraction of  colour and tannins) and after (first) fermentation, it is divided between stainless steel tanks and local oak barrels for the (second) malolactic fermentation, all done to extract the colours, tannins and intense aromas they are looking for. \u003c\/p\u003e\n\u003cp\u003eWhen we finally get our hands on the wine - good things come to those who wait - it shows with a charming clear and bright red ruby colour. It has a typical Pinot nose with notes of violet and spices. It opens up beautifully in the mouth - still violets and subtle spices but it's the warming (but not from alcohol, it's only 13%) and mouth filling flavours. While not technically a big wine, it is powerful and well-structured in the mouth, and finishes with flavours of red berries (raspberries \u0026amp; strawberries). it is quite Burgundian in style - a real happy surprise! \u003cbr\u003eThis is the sort of Red wine that works really well with white meats, fish, charcuterie etc\u003c\/p\u003e\n\u003cp\u003e\u003cbr\u003e\u003c\/p\u003e\n\u003cp\u003eAlc.
