St Georges is a tiny appellation just 3 km north of the town of Saint Emilion, with just under only 200 hectares and 24 growers in the whole region. It is basically St Emilion Grand Cru* at a better price. 
It borders St Emilion to the south and lies to the east of Pomerol & Lalande de Pomerol. 

Ch Cap d'Or is a Merlot dominated (86%) wine as you would expect from this region. 
It has a deep red colour in the glass, with soft red fruit aromas (raspberries) and  hint of oak. It is oak aged but only 50% in large 500 litre casks and 50% in tank, so you get the hint of oak but well restrained!  
In the mouth it offers lovely soft fruit, very fresh with mineral undertones. It is elegant and fresh, lovely soft fruits are dominant and the tannins are fully ripe.
It's the sort of wine that fully 'explains' the St Emilion style - soft, approachable but long and rewarding.

This is a wine that goes well with most foods, whether it is Roast Lamb, Comté (and other cheeses) and red meats, but avoid light fish dishes and shell fish or overly spiced dishes - I'm a shell fish nut but the fruit can overpower the subtle flavours. 

*Grand Cru: In St Emilion, Grand Cru is not a mark of quality but a regional designation! It basically means that the wine was made to approved local standards.
However, Grand Cru Classé is a quality designation, based on tastings, terroir, reputation (and is meant to be reviewed every  years!)
