Chateau du Calvaire, Grand Cru vineyard is a 30 hectare property situated in the village of Saint-Etienne-de Lisse, just east of the town of Saint-Émilion. This wine, made with 80% Merlot and 20% Cabernet Sauvignon spends 9 months in oak barrels (not new!).
On opening, it shows aromas of dark fruits (black cherry, blackberry, and plum) and a hint of spice.
On the palate, you get ripe black fruit flavours and a nice balance of sweetness and acidity with well-integrated tannins. There are traces of vanilla, from the barrel aging.
It's medium-full-bodied, with a smooth and velvety texture and a long soft, elegant finish. If you have opened it earlier, you'll get a nice layered finish.
Saint Emilion wines are actually an excellent choice for most occasions. As they are generally soft and fruit driven they go very well with most meats. They also go really well with simple meat dishes (not to spicy) Pasta dishes and of course, my favourite, Comté cheese!
Note! One tasting note I read said 'perfect to serve with a Ragout with Cranberries' - I might give that a miss!
